Brisket Pot Pie

here's a keeper I made with left overs today

1 small white onion chopped
2 ripe tomatoes peeled and diced
1 regular can mixed vegetables
1 pack Lipton beefy onion soup mix
1 cup smoked brisket chopped
1/2 can cream of potato soup
2 frozen pie shells

sauté onions in a little olive oil
add tomatoes and let simmer for 20 min / salt and pepper
add brisket and let come back to simmer
add onion soup mix , stir well
add potato soup concentrate
add a little water if needed.... taste for salt and pepper
simmer 10 minutes and then add to pie shells
cook in preheated oven at 400 deg. until golden brown (30 min)
