In addition to dumping the ash (which can also absorb/transmit odors) and cleaning the grill, be sure to clean the inside of the hood as aromas are carried up and contaminate the inside of the hood.
Long story short, Mike Scrutchfield was using my WSM's for a contest in California which he flew out to cook (I got to assist and it was like a private lesson).
He won 1st Chicken, Pork and Brisket and Grand Championship... finished about 10th in ribs that tasted a little like the salmon I had previously cooked in the WSM he used for his ribs.
He had told me in advance to clean 'em all up good. I did, they looked like new... except the inside of the hoods.
The one I cooked salmon in the previous week tainted the ribs with salmon flavor... the rib judges didn't like the added flavor.
