Hello, it may not be your knife that is the problem. Could be timing. You can trim heavily before you cook so there should not be much to do besides slicing for serving at home. If the brisket is hot when you slice it then it should be ok for serving. But if you want to warm it up keep it all together when you slice and put it in the oven with a little, not much, warmed sauce for just a few minutes at pit temp before you plate it. If your brisket is falling apart it's over done so slice it in thicker pieces when that happens. Hope this helps, what do you think? Mary Ann
