When I use the WSM I don't use any water in the pan. I make three balls of crumpled aluminum foil about baseball size, and put them in the water pan. Then I cover the pan with the balls in it with aluminum foil. I open all the three lower vents all the way as well as the top vent. The top vent remains open all the way all the time. When the temperature gets to 240 I close the lower three vent half way. If it goes below 240 or 250 I add some lump charcoal. If it gets too hot I open the top lid about 30 seconds to get some of the hot air out. That's just about it.
