Personally, I don't have a problem with it.
KCBS has decided that sous vide cooking isn't allowed, which the meat doesn't come into contact with the water. I'm wondering if they would be concerned that by doing the pressure cooker thing, you might/could actually cook at a low enough temps that it would be the same process?
