What about vac packing in a heavy duty bag with marinade spices etc, wrapping in foil til done and applying the dry heat and smoke at the end?? Not bbq in the true sense but I have had meat done this way and true to the letter or not, it was damned good eating! Not trolling, I believe in BBQ, but there are sooo many ways that people work the fringe of the rules nowadays...........
