Yield aside for a moment (40% loss is a good guess), you also have to look at makeup of the group (men/women, big eaters, older teenage boys), what type of event it is (less for a wedding, more for an afternoon picnic), an what other entrees are served (pork alone or also burgers, ribs, etc etc). All these things influence how much pork you need. Odds are good you only need 1/4 lb pp, if there are other things and not a particularly heavy-eating crowd.
