Great choice Ray , Once you start grinding your own burger you will never buy that pink stuff. To get buy on the cheap I buy chuck steaks from Sam's club. I always use chuck as my starter. My local grocer informed me that on Wednesday they pull all the steaks to be reduced in price so that's when I hit the cheap meat rack. Rib eye, T bone, NY strip. You can always get straight beef or pork fat to add for fat content. If you want to kick it up a notch try brisket point or flap meat. There's many combinations to try.
