Thanks for the recommendation. I see lots of those in use as I walk a cooksite, so there must be something to them. I recently helped cook for a church dinner...13 brisket flats needed to be sliced and all they had were dull "crappy" knives. I went home brought back my two big slicers. I would have brought my electric knife but I knew it would not survive. The slicers worked beautifully, but a sturdy electric knife would have been far better and far faster, provided it didn't overheat. On a website somewhere, I saw an electric knife for about $150. That's steep, I admit, but it might be what I'm looking for. The trouble is now...where did I see it?! LOL. Thanks again for your recommendation.
