I have to cook for a large group and there may be a two hour delay between the brisket and chicken being done. Will the brisket hold ok in a Cambro for two hours and still be safe? Will the texture and flavor still be good? I don't want to have to hold food for that long, but I don't have the cooking capacity to do both at the same time. I will have access to 3 Cambros, I'm just not familiar with them. Thank you!
