My thought on foiling the whole time.....If you're going to foil for the entire cook, you might as well be cooking it foiled in your indoor oven because you won't get any smoke at all on the meat. It could possibly be the best brisket that lots of people have eaten, but it can't be BBQ is it doesn't get some smoke from a fire.
