I was at a well known BBQ rest in WI that sauces everything before it is served. The pulled pork was actually over sauced, ribs were good but no smoke flavor to them and it was falling off the bone and no smoke ring, chicken had smoke flavor but skin was rubbery. Is saucing the meat trying to hide flavors in the cooking process? I just don't understand how this place that has been around for years can be serving this type of food.
Is the public just not instructed on what good BBQ is?
