Ray I use the Lansky sharpening system. LOVE IT. But in saying that, I just sent all my stuff out to a pro to be sharpened. Have to say I like the Lansky system.
I am going to buy a Dicks Rapid Steel to use before I trim my meat for contests. Hear tell it will make knives scary SCAREY sharp. Lansky will make them scary sharp.
