That was a good read, thanks NYCBBQ. I don't know what that spinach oil might be, but the idea of a garlicky greens and oil condiment for brisket sounds pretty good to me. Arugula is really good on a brisket sandwich, that pepper flavor and crunch adds something you might like at home. Micro greens are especially good for that too. No tweezers required at home.
