I think having good fries at a barbecue restaurant is essential. Notice I said good. Bad fries at any restaurant can ruin an otherwise excellent meal. The next question is how to make good fries. The seasoning you use makes the difference, it has to be unique and that means salt and other spices. However, there are some places like McDonalds that are so concerned about turning out healthy food that their fries are terrible. In a BBQ restaurant nobody pays any attention, as to - is your BBQ healthy?

If you what to taste good fries go to Oklahoma Joe's the last time I was there I could make a meal out of their fries. The also sell a ton of fries and everyone knows their food is great and I think the fries helps reenforce that impression.
