As long as the proper handling procedures have been followed, it should be good for up to 7 days. Just rinse after opening and cook to the normal 195 internal for pork. The use by date is the manufacturers guarantee for best use date and really does not affect the product.

There are many sites out there that make a lot of money selling items that are past the use by date. Smell and proper handling are the most important factors.
