Yo Peter, I posted this tip years ago. Anytime I cook burgers, chicken parts, or bacon, I cook indirect. That is two rows of charcoal on each side and the meat cooks in the middle. (This information is for newbies that may be reading this.)
So to double the cooking capacity I do this. I place one cooking grate with the handles up and put the meat on the grill. I take another same sized grate with the handles down and place this grate so the handles are perpendicular to the handles on the bottom grate. The lid will still seal and you get twice the meat on the Kettle.
