I was asked to cook 5-20 pound turkey's, for an outdoor picnic wedding. They have already bought them, they are injected with broth. I plan to inject them with only apple juice, (already has salt in the broth). I plan to split them in half to help with the cooking and space management.... (Also cooking 100 pounds of brisket)
My question is a time question. Cooking at about 250, how long should I plan on cooking them?
