Forget the below posts. That kind of response is exactly why I've basically stopped using this "good ole boys" forum. An easy, hard to mess up , inititial cook is a pork butt. Cook at 225° - 250° until internal temp of ~ 175-180°. Then double wrap in foil until internal temp of 195-205°. Remove from smoker and rest in cooler for 1-2hrs before pulling. You can't go wrong.
