Your much too kind to spell check for Rick, but you do make a good point on needing to know what type of pit he is working on.
Had a friend that just got into smoking and was having a difficult time trying to cook a pork butt on his cheap imitation Oklahoma Joe offset. I asked if he lined the firebox or at least put a couple of rocks in it. After talking a bit, I told him to smoke it 3 hrs the best he could, double wrap in foil, and put in the kitchen oven at 275* until the PB reach an internal temp of 195*. Rest in a cooler with a towel wrapped around it for about an hour.
Next time I ran across him he thanked me for making him look good in his neighborhood. Heck, I'm sure a lot of us thought that a pork butt would be the easiest thing to smoke, but he sure struggled for a while.
