50 oz fish sauce
8 oz garlic, crushed
16 oz shallots, sliced
2.5 oz black peppercorn (whole)
1pt sugar
5gl water

Directions :
1. in a large stock pot combine all the ingredients, bring to a boil then simmer for 15 minutes.
2. after simmering pull off heat and allow to steep for 30 minutes.
3. cool in an ice bath, store and label in a 22 quart Cambro.
