i'm not a meat doctor - but i would only do about 6 hours tops with that.. my feeling is that the sugar and acid will eat that butt up too much if you do it longer than that. i used to use Mojo Criollo marinade - had fruit juice - pineapple, etc. and after 12 hours or so that butt would be grey and real soft.. it didnt hold up well.
