Ray, any seasoning blend, commercial or homemade will adapt to any meat or meat blends quite well. Are you looking for a Johnsonville copycat recipe or just any good sausage seasoning blend? Len Poli's site is a great one that is always at the top of peoples lists. Try out 3-4 pound batches at a time and see what fits!
