There's a little confusion out there as I believe there are a number of Beef Marble Scores(BM)being used.
Japan (I think) has five grades, 1-5 with 5 being the highest and 1 and 2 not really being used with regards to Wagyu as they're too low.
Australia does another system which maybe 1-12 with 1-3 not being used.
Pretty sure, but maybe wrong, the US uses the 1 through 9 with 1 and 2 not being used.
Bottom line, to compare Wagyu to Wagyu the buyer needs to know the Beef Marble Scores(BM)and be sure the various sources they are comparing are using the same standard... otherwise it's not a valid analysis.
If you figure it out or find a credible web site that explains the various Beef Marble Scores(BM)being used please share with us.
