Good chicken skin??

After I had competition chicken I realized I SUCK! I have seen someone scrape the fat underneath to make it bite through.However, my last comp I ate a thigh which seemed to still have the fat but was bite through. Any advise? I want to get as much smoke as possible, without rubberizing the chicken.
