Rick, I seem to remember that Kelly (4 legs up) and Mat (smoking 101) both did well with brisket during a Cabala's contest a few years back.
I also had a trucking co that also had a game farm ask me to smoke 30 whole pheasants. I brined like turkey and smoked at 275* with Mesquite until they hit 160*. They seemed to like them.
