There's almost always some parsley hanging on, particularly when the sauce is sticky and thick. I (and most other judges I've ever seen) pick it off. It does impart a slight flavor of its own and I don't want that to get in the way of what I'm supposed to taste.
On a humorous note, several years ago a judge seated next to me got a huge batch along with his piece of chicken and commented, "Ah, and some salad to go with it!"
