Yo Donny, I don't usually trim the fat off pork butts, but if there is enough worth saving, I will use for mixing in with venison when I do my annual deer grind. When the various deer seasons in Missouri are over, my two neighbors and I pool our venison, weigh each person's amount for the percentage of their contribution and use those same percentages for their respective portion of the final product.

During the year, I will seal and freeze various trimmings from bacon, pork loins, and brisket to add for fat to the venison we grind. We generally use a 20/20/69 mix of pork fat and shoulder/brisket trimmings and point/venison. So that is what I do with the pork fat.
