I just ground up 2 gallon containers of fat trimmings from some butts and am going to put it in a hotel pan and put it in the oven to make some lard.
22 butts came off the smoker earlier and a brisket went on. Ribs and a front leg from a roadkill deer from a family memeber is going on the smoker tomorrow. Deer is getting a good rub down then some smoke for a bit then wrapped in foil with butter, onions and garlic and a little more rub until its done. Did a fallow deer this way years ago while cooking for some guys. Came out very good! Making a side of roasted garlic mashed potatoes and gravy to go with it:)
