I think most judges would pick off any large sprig and sometimes a large leaf of flat leaf parsley or cilantro that is stuck in the area of the intended bite as it does disguise the neat taste, especially chicken. If it's more of a finely chopped or sprinkled, it's assumed the cook intended it to be eaten with the entry. Many judges also use sprigs of parsley from a sample or two in lieu of crackers between entries as it actually cleanses the pallet better and then a swig of water after.
