Thanks Lee, that look good. I have been meaning to post about a book called Soul Food by Adrian Miller. It won a James Beard Award and I heard him speak at a book festival a couple months ago. His chapter on greens is excellent and talks about how greens and pork were cooked by the Romans 2000 years ago. Even more interesting is the entire history of how cooking of greens evolved over the centuries in the South. Similar chapters on fried chicken, mac and cheese, yams, cornbread, hot sauce, etc. Also Miller is a CBJ and he may be writing a book on bbq in the future. It would be nice to see one by a real food historian. Plus he seemed to be a really nice person. His mother's greens recipe is linked and it looks good too.
