As mentioned sausage. I use it when I want to add more fat to sausage. Freezes well. Just had 2 gallon bowls of fat trimmings and made lard in the oven. Ended up filling a 5 pound sour cream container up and a quart storage container. Came out very nice:) Using some for Mexican fried potatoes this weekend with chorizo, fried eggs, arbol chili sauce and avocado.
