They do get hot enough to sear. They will get to 700 - almost scary at that point - you want the grill clean so you don't start a grease fire.
The Louisiana feeding and burn system is somewhat diff than the others and that allows for the higher temps.
I can get beautiful diamond grill marks on a steak and then finish it off.
I think Kelly - 4 Legs Up - has some vids on the net, or give him a shout. He knows these machines very well. I own 3 different sizes and put them through the paces.
