If you are using for a grill, both bottom and top vents wide open. Depending on what type of meat you are grilling, you may have coals banked to one side to grill chicken, or spread across entire grate for steak. If using for a smoker, bottom vents partially closed, top vent mostly open or fully open. When used as a smoker, one method is you need to bank the coals to one side and use a foil half pan with or without water under the meat.
A Weber is one of the greatest grills out there for the money. The learning cure is not too steep, it just takes a little practice to get the hang of it.
