Like BBQ Bob asked...WHAT are you cooking on? Also, open the stack vent(s). If air can't get out, it can't get in.
You can never, ever get anything above the temperature that you are cooking. if 170 is your cooking temperature, you can NEVER get above 170. And it will take FOREVER to stabilize the meat @ that temperature.
