Start off by hiring a good copacker. They can usually help get you pointed in the right directions.
You cant legally sell sauce you make at your home. BBQ sauce hot sauce and salsas do not fall under the cottage industry guidelines in most states. If you want to make it yourself in a licensed kitchen there will be some certifications you will need to get be required to complete "Better Process and Control " school. Its only 2-3 days long.
There is a great book called "From Kitchen to Market" that you need to buy. Feel free to contact me if you have any q's. I own a sauce bottling business in Central FL. I make Swampboys sauces, Sweet Smoke Q injection etc.
