It could be that those 28 people who are going to continue cooking your brisket the same way are just happy with the way their brisket tastes and they probably are not people who are cooking in contests. I know I would fall into that group, I don't cook in contests and everybody likes my brisket just the way it is. My big problem is the cost of brisket now is so high that I just can't justify cooking very many of them in a year. So I find myself cooking a lot of chicken nowadays.
