Hanging is better for appearance sake. If the fat is draining you are smoking at too hot a temp. Try not to let the smoker temp go above 170 degrees. Retaining the fat and moisture will help keep the sausage from shrinking and improve the quality of the finished product. Plunging the sausage in ice water bath will help eliminate shrinking also.
