Let me see if I have this right. You want the pork shoulder to taste like ham and not like pulled pork. I have seen more people complain that their pork butt tastes like ham. On the BBQ Forum search engine the first result for Pulled Ham is:

last weekend was the 1st try at pulled pork..temp at 200 the whole time ..no peeking, apple and hicky wood chunks in a bm offset w/ water pan..somke stack 1/3 to 2/3 open and the fire box about 1/4 way open...7lb butt about 10 hrs and it cut and came out like ham..what did i miss here?..also i have yet to get the baby backs(peeled) to come clean off the bone :( help newbe here..fbks ak"."
