For years I was thinking about this recipe. Randy's recipe was spot-on! I will have to make it again because I have talked about it so much, that I have had to give quite a bit of it away. I used pecan wood and two butts fit on the WSM's two racks with enough room for the smoke to circulate.
So far my favorite use was a couple of tablespoons of finely diced Tasso inside of an omelette.
