Asked several cooks that question. Answer I got was that was what the judges wanted to see. My opinion is that wet may look pretty, but really takes away from taste. I want to taste the meat with a good dry rub that is complimentary, not some cloyingly sweet or hot stuff that completely looses the meat. Let the meat shine thru.
