Separate it from the meat and scrape the underside with the back of a knife to remove any fat/tissue. Reattach with tooth picks and cook hot, 300+. Some have used meat glue (transglutaminase) to put the skin back on. Expensive but sounds like a really fun thing to play with. Lots of ways to use this stuff!!
