We've turned in legs the last two contests we've done with mixed results. The most recent we were 19th of 33 teams and the one before that we were 5th out of 71 teams. We detach the skin from the bone and push up to create a nice round lollipop out of the leg. Use a hacksaw to cut off the knuckle. We do brine them. Rub and sauce are our own. Make sure you foil the bone after it's been on the smoker for awhile. If not it will get really dark.
