I wanted to cook off a pork belly just to see if it’s as good as it looks on the BBQ T.V. shows, but I could only buy it buy the case. It contained 4 sides of pork bellies. I smoked one off and it was decent, but I think I prefer a butt over all. Now I’m going to smoke off the remaining bellies and make bacon out of them.
My question is…I’ve injected it with apple juice and coated it with maple syrup, brown sugar and kosher salt and cracked black pepper. I do not have any pink salt or other curing ingredient. I’m letting it age in the fridge for about a week and plan on smoking it off this weekend.
Do y’all think this will make bacon or just smoked pork bellies without the curing ingredients?
