The link below is to a short article about rabbits and the extinction of the Neanderthal people. It seems that the Neanderthals didn't hunt rabbits and offers the theory that type of behavior could have lead to their demise.

When I was around sixteen I hunted a lot of rabbits. The hunting limit in MO at that time was really high, I recall it was something like ren or twenty. Anyway we ate a lot of rabbits growing up. At that time I didn't know anything about barbecue so they were cooked pan fried and in stew and were very good. I haven't eaten any since.

There has been very little posted to the forum about rabbits over the years. Here is a recipe from the search engine about smoking rabbit:
Smoked Rabbit Report (12/26/1997 1:42:09 PM by Chief)
Hi All,
Just a quick report on the smoked rabbit. First I marinated the rabbits for about 30 hours in the following mix:
(2) large bottles of Wishbone Robusto Itialian Salad Dressing
1/4 cup of Tony Chachaere's seasoning
3 tablespoons of thyme
3 tablespoons of oregano
1 tablespoon of black pepper
1 cup red wine
2 onions chopped
1 bunch green onions chopped
2 cloaves garlic chopped

I smoked them using mesquite, it took about 3 hours. After 1 hour I covered the rabbits with bacon and basted them occasionally with Dales Sauce.

Anyway the meat is a beautiful white and has the same texture and look as a center cut pork chop. Everyone enjoyed it !!! Thanks to those who gave suggestions.

Anyone have any experience smoking rabbits?

Ray Basso
