I purchased a weber smokey mountain 14.5 inch cooker this past weekend, since I need something until my cooker gets done being built. Anyway, the cooker worked AWESOME smoking 2 pork butts. My question lies with this:
I seasoned the smoker the night before the cook, standard practice style, but with lump charcoal (not out of the norm), and ran the pit up to 275 with one damper open on the bottom and wide open on the top, never got higher.
Next day I started the cooker with the same lump, got to 275 just fine just fine with same damper set up, added the pork butts, dropped to 225 with the meat for about 2 hours, opened ALL three dampers on the bottom to spike the temp........but the temp NEVER got above 275.................EVER!! The pit ran the same with one damper open vs three dampers open.
Thought this was odd, so I did a loin the next day........SAME EXACT RESULTS
EVERYTHING came out amazing!!
But is the cooker set up to run 275 and Lower, or can it get ABOVE 275 with the use of a Guru.......?
