If there is no smoke it is not BBQ.
If you need to know if your smoke level is good cook 1 rack or 1/2 rack of ribs with only salt & black pepper and taste it without sauce.
Do not submit that rack for competition it will not win without sweet
but it is worth eating if you like pork flavor and it will let you know if your smoke level is where it needs to be.
