I used the water pan, but I did take the pan out and it spiked tremendously!! I start the charcoal in a starter then I dump in, let it burn for a bit, then add the rest of the parts on top!! Let pit come to temp and settle in for about 20-30 min......add meat!!
I have NO PROBLEM with the pit, was just wondering how it all calibrates as it sits with all the pieces put together!!
