Great, then you know that the water pan and how much hot charcoal you use and the vents are all fire control levers to get to your desired pit temp. If you want to get it hotter and it won't perhaps it needs more air or fuel. Once it settles in on a temp it's reliable. One trick to get the temp up is to offset the lid a bit to increase airflow. but be careful, it can happen fast. M.A.
