I don't think you can over smoke at a BBQ Competition or a Restaurant application except for......You have the wrong temp as starting too fast on your smoker before the heavy strong smoke dies down into a pretty blue smoke or a light white sheen. I have found that if I use starter fluid (which I don't) it will send a fuel taste up into the meat and that is a noxious setting for flavor and it will turn the meat Coal Black....Just let your cooker start and make sure it starts puffing out that light pretty smoke then you can keep adding wood along as you go and it should not be a problem....
